02/02/2019 News - Cretan Dry Anthotiro
Very similar to mizithra, anthotiro, which is made with milk and whey from sheep or goats, can be fresh or dried. Produced in a variety of areas and regions across Greece.
The Cretan Anthotiro over the years has become the leading produced type. Anthotiro, which literally means flower cheese, has been produced for centuries.
The fresh variant is soft or semi-hard and has a sweet, creamy taste, with no rind and no salt. It can be eaten for breakfast with honey and fruit, or as a savoury dish with oil, tomato and wild herbs or even in pastries. The dry variation is usually hard, dry and salty and is often eaten as a topping on pasta or in salads.

One of the most common questions we not only received at the festival but throughout our reach is “where can we find your products”You will find most of our products at all leading Independent grocers, Delis and Fruit markets across Sydney. We also have a selected range of products in all Harris farm Markets and selected IGA’s. If you can’t find our products feel free to contact us with your location and we will provide your nearest stock list or as always ask for our products by name, so we can supply your nearest Grocer.

And it’s a wrap!A Great day on Sunday at the Let’s go Greek festival Parramatta. From the food, funfair and Greek presentations it was the best yet! Ingredients for 4 Servings:
- 16 Prawns
- 2 tablespoons olive oil
- 2 spring onions chopped
- 1 shot of ouzo
- 1 chopped chilly pepper
- 1 chopped or crushed garlic clove
- 250 gr Kyknos chopped tomatoes
- 2 tablespoons Dijon mustard
- 2 tablespoons chopped parsley
- 100 gr feta cheese, crumbled

Recipe - Prawn Saganaki with Feta Cheese
One of our favourite dishes to warm you from the inside out.
A traditional recipe of the Greek cuisine, a tasty journey to the blue seas and the Greek summer, the Prawn saganaki with feta cheese is usually served as a starter. Preparation time: 10 minutes Cooking time: 15 minutesStart by peeling and cleaning the shrimps, keeping only the head and the tail. Heat the olive oil in a large saucepan, cover the shrimps with flour and fry them for a minute. Then, add the spring onions, the garlic clove, the chilly pepper, and the pepper grains. Fry them for another minute, add the ouzo shot and when the alcohol boils down, take out the shrimps from the saucepan. Add the chopped tomatoes and the mustard, stir all the ingredients together and cook for ten minutes. Bring the shrimps back in the saucepan, mix them with the sauce, remove from the lid. Top the saganaki with the feta cheese and parsley and serve hot. If you prefer it as a main dish, serve with rice. Yum
